It started in 1971 when the Metcalf family opened a restaurant in Lafayette with nothing but a kitchen and a feel for what people actually want to eat. That feel got passed down. Not a recipe book, not a franchise plan. Just an understanding of flavor that you can't fake and can't rush, carried from one generation to the next for over fifty years.

Along the way, the Metcalfs have fed a lot of people. Decades of restaurants, decades of dinner rushes, decades of watching what gets eaten down to the last bite and what gets pushed to the side of the plate. That's how a family learns what actually tastes good. Not from a lab. From a room full of hungry people who don't lie to your face.

Somewhere in all those years, one thing kept showing up on the table that people couldn't stop asking about. Cane syrup and red jalapeños, worked into dishes until it wasn't a secret anymore. Customers wanted a bottle to take home.
